1 c. cooked rice 2 eggs, slightly beaten 2 c. milk 1/3 c. sugar 1/8 tsp. cinnamon 1 tsp. vanilla 1/2 c. seedless raisins optional- 1 tsp, grated orange or lemon rind

Directions:
Directions:
Combine eggs, milk, sugar, cinnamon, vanilla, raisins. Stir in rice, mix well. Pour into greased 1 1/2 casserole. Bake at 325º for 45 minutes or until knife comes out clean.
