2 eggs 1 c. sugar 1 c. flour 1 tsp.baking powder 1/4 tsp. salt 1/2 c. milk 1 T. butter 1/2 tsp. vanilla or almond

Directions:
Directions:
Preheat oven at 350º. Grease a 9x9x2 pan. In small bowl beat 2 eggs until thick and lemon colored. Slowly add 1 c. sugar and beat at medium speed for 4 to 5 minutes. Sift together 1 c. flour, 1 tsp. baking powder and 1/4 tsp.salt. Heat milk and 1 T. butter until melts. Keep hot. Add dry ingredients to egg mixture. Stir until just blended. Stir in hot milk mixture. Blend well. Add 1/2 tsp. vanilla or almond. Best made the day before. Split in half and fill with fruit or jelly. Frost with whipped cream or frost entire cake with chocolate icing.
