2 cans kidney beans (or cook dry beans)
1 c. cooked rice
1 c. cheddar cheese, shredded
1 tomato, diced
1 jar green olives, sliced
Optional: ground beef or turkey

Cook rice and layer onto plate. Top with (meat), beans, cheese, tomatoes and olives.

This is a cheap and easy meal that we've often enjoyed since being introduced to it by dear friends in London. When the budget calls for rice and beans, this is where we turn.
