2 cups biscuit mix
2 tbsp brown sugar
2 tsp cinnamon
2 eggs
1 can (12 oz) evaporated milk
1/2 cup canned pumpkin
2 tbsp vegetable oil
1 tsp vanilla extract

Directions:
Directions:
Combine biscuit mix, brown sugar & cinnamon. In another bowl combine eggs, milk, pumpkin, oil & vanilla; stir in dry ingredients and mix well.

Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top. Cook until 2nd side is golden brown. Serve with syrup. Makes 1 dozen.
