Pumpkin Cookies Recipe

2 c. flour
1 c. instant oats
1 tsp. baking soda
1 tsp. cinnamon
tsp. salt
1 c. soft butter
1 c. firmly packed brown sugar
1 c. sugar
1 egg
1 tsp. vanilla
1 c. pumpkin
1 c. chocolate chips

Preheat oven to 350 degrees. Combine dry ingredients- set aside. Cream butter. Add sugar, and cream together. Add egg, vanilla and mix. Alternate pumpkin and dry ingredients into sugar mixture. Add chocolate chips. Drop by rounded tsp. onto cookie sheet at least one inch apart. Bake 12-15 minutes.
