LENTEN - Strawberry/Blueberry/Blackberry/Cranberry Muffins
1 ½ cups Flour (I use a mixture of WW/buckwheat and unbleached white.)
½ cup golden brown sugar
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
¾ Cup Vanilla Almond Milk (can use Vanilla Soymilk)
1/3 Cup unsweetened applesauce
1 Teaspoon Vanilla Extract
1 Cup Strawberries,Blueberries,Blackberries or Cranberries
1 grated lemon
Toasted almonds-handful are optional

Preheat oven - 375 degrees and line 12 muffin tin with paper baking liners..
Mix together all your dry ingredients (Flour, sugar, salt, baking powder and soda.) Gently stir in almond milk, oil, and vanilla-there will be some lumps. Fold in strawberries/blueberries/blackberries/cranberries and pour batter into muffin tins, ¾ of the way to the top. Bake 15 – 20 minutes-depends. Insert a toothpick-muffins are baked if toothpick remains dry. Leave in muffin tin about 15 minutes before removing to cake rack to cool off.

I took a basic non-Lenten muffin recipe and kept experimenting until I came up with a Lenten version.
