2 yellow squash
2 zucchini squash
1 stalk asparagus (mainly the tips)
1 large red onion
1 red pepper
1 yellow pepper
1/2 head of broccoli
Any other favorites
Oregano
2 c Intaglio blend cheese or Mozzarella
2 cans stewed tomatoes

Directions:
Directions:
Cut up vegetables and mix together in a 9 x 13 dish. Cover with oregano; mix in cheese. Drain stewed tomatoes and mix into veggies. Bake at 350 uncovered for about 40 minutes. Delicious and low in carbs!
