Ingredients: Filling: 2 T butter 1/4 C chopped onion 2 T flour 1-1/4 C corned beef, cut in pieces 1-1/2 C canned stewed tomatoes Pastry: 2 C flour 1 tsp baking powder 1/2 tsp salt 6 T vegetable oil 1 egg yolk, slightly beaten 2/3 C milk

Directions:For Filling: Melt butter, add onion and cook until soft. Add flour and stir until well blended. Add remaining ingredients (crush up tomatoes - use your hands!). Bring to a boil, stirring constantly, until thick and smooth. Let simmer about 10 minutes more.
For Pastry: Sift dry ingredients together. Add shortening (oil) and mix with a fork. Add egg to milk, then add that to dry ingredients to make a soft dough. Turn dough onto floured board and toss lightly until outside looks smooth. Roll out half the dough 1/8 inches think. Cut into quarters and put each quarter into a muffin cup. Fill with corn beef mixture and fold eges of pastry over to center. Pinch edges together on top, and repeat with remaining dough. Bake in preheated oven at 425º for about 20 minutes, or until tops are lightly browned. |

Notes: This is actually a "Gile-by-Marriage" recipe, as it came from Mom's (Millie's) 2nd husband Norm's family. But I remember Mom making this a lot, and making it with her quite often in Madison. Never sure why they called 'em "patties", as they're more like little cups, but no one else seemed to know the answer, either! :-)
