1 16-oz. bag of frozen chopped onions (3-4 cups)
3 8-oz. pkg. cream cheese, softened
2 c. grated Parmesan cheese
1/2 cup mayonnaise
corn chips, Scoops, crackers of your choice

Directions:
Defrost onions. Roll in paper towels to remove excess moisture. Preheat oven to 425º. Mix together all ingredients. Transfer to shallow 2-quart soufflé dish. (2 pie plates work well too). Bake for 15 minutes or until golden brown.

I halved the recipe, but only used 1 8-oz. block cream cheese. I added a little extra mayonnaise and a little fat-free half & half. It worked fine. The full recipe would be great for a crowd, but halving it was ample for 10-12 guests (as one of several appetizers being served).
