3 large red onions, thinly sliced
1 cup pearl onions, blanched and peeled
2 tbsp. butter or margarine
salt and pepper
2 1/2 lbs. boneless pork loin, tied
1/2 cup cooking sherry
2 tbsp. chopped Italian parsley
1 1/2 tbsp. cornstarch
1 tbsp. water

Directions:
In skillet, sauté onions in butter until soft. Add salt & pepper. Put pork in slow cooker, add onions, parsley and sherry.Cook at a low temperature for 8-10 hours. Remove pork; let stand 15 minutes before slicing. Mix cornstarch with water, add to pot and stir to thicken for gravy.
