1 garlic clove, halved
cooking spray
6 peeled red potatoes (about 2 lbs.), cut into 1/8-inch slices
2 tbsp. melted butter
salt & pepper
1/2 cup (2 oz.) shredded Gruyère or Havarti cheese
1 cup fat free milk

Preheat oven to 425º. Rub 11x7 baking pan with cut side of garlic halves; discard garlic. Coat dish with cooking spray. Arrange half of potatoes in dish; drizzle with half of butter, sprinkle with salt & pepper and top with half the cheese. Repeat layers. Bring milk to boil over low heat. Pour over potato mixture. Bake 40 minutes or until tender. Can also bake at moderate temperature and turn oven up to 425º for last few minutes to brown top. Serves 7.
