2 lb. carrots, peeled and sliced
1 small package cream cheese
1 can French fried onion rings
1/4 c. butter
1/4 c. Cheddar cheese, grated
1 tsp. salt
1/2 tsp. parsley
1/2 c. liquid from carrots

Directions:
Directions:
1. Cook carrots with salt until tender. Drain, reserving 1/2 cup liquid. Slice or mash carrots. Stir in carrot liquid, cream cheese, Cheddar cheese, butter and half of the onion rings.

2. Put in a 2-quart casserole. Sprinkle parsley and rest of onion rings on top. Bake, uncovered, at 350ºF for 25 minutes.
