2 small heads Iceberg lettuce
3/4 c. celery, diced
1/2 c. green pepper, diced
1/2 c. red pepper, diced
1/2 c. onion, chopped (red or white)
1 (10 oz) package frozen peas
2 c. mayonnaise
2 Tbsp. sugar
4 oz Cheddar cheese, grated
8-12 slices of crisp fried bacon, crumbled

Directions:

1. Break lettuce into bite-sized pieces and layer bottom of 13 x 9 inch glass pan. Mix celery, peppers, and onion to make next layer.

2. Run hot water over frozen peas just long enough to separate them. Blot and dry, then spread as the next layer.

3. Mix together sugar and mayonnaise and spread over peas. Sprinkle grated cheese; add crumbled bacon as final layer. Cover with foil and refrigerate overnight.
