2 bunches fresh parsley
1 c. cracked wheat (bulgur may be substituted)
1-2 bunches green onions, sliced thin
2-3 tomatoes, diced
Olive oil
Garlic salt
Pepper
Wine vinegar
3 c. boiling water

Directions:
Directions:
1. Pour boiling water over cracked wheat; let sit until water is absorbed. Drain excess water from wheat; cool.

2. Snip parsley, including stems. Place in large bowl. Add onions, tomatoes, and cracked wheat; toss. Add olive oil, garlic salt, pepper and vinegar to taste, tossing lightly.

3. Garnish top of salad with diced tomatoes and green onion tops.
