Ingredients:  
1 package chicken flavored rice mix
2 green onions, sliced
1/2 green pepper, minced
8 green olives, sliced
2 (6 oz) jars marinated artichoke hearts
1/4 tsp. curry
1/2 c. mayonnaise

Directions:
Directions:
1. Cook rice as directed on package, omitting butter. Cool to room temperature.

2. Add green onions, green pepper, and green olives. Drain juice from artichoke hearts. Add to juice, curry and mayonnaise. Add juice to rice mixture and artichoke hearts. Refrigerate until serving time. Garnish with tomato wedges, if desired. Can be kept refrigerated for several days.
