1 1/2 c. cooked orzo pasta
6 eggs
1/3 c. ricotta cheese
1/4 c. creme fresh or sour cream
2 c. cooked chicken, cubed
4 scallions
1/4 c. parsley, chopped
1/3 c. diced roasted red pepper
1 tsp. salt
1/4 tsp. black pepper

Directions:
Directions:
375º oven. Combine eggs, ricotta cheese and creme fresh. Add balance of ingredients and mix until combined. Pour into 1 1/2 qt. baking dish and bake for 25 min. Broil to brown top approx. 5 min until golden. Let set 5 - 10 min before cutting.
