6 boneless, skinless chicken thighs (I use a few breasts), cut into 1-inch pieces
3 tbsp butter
1 tsp salt
1/4 tsp pepper
2/3 cup finely chopped onion
8 oz fresh mushrooms, sliced
3/4 cup sour cream
1/2 cup (2 oz) shredded Havarti cheese
1/4 cup plain, fresh bread crumbs
2 tbsp chopped fresh parsley

In skillet, melt butter over medium-high heat. Add chicken; cook, stirring often, about 7 minutes or until browned on all sides. Sprinkle with salt and pepper. Add onion; cook and stir until onion is clear, about 5 minutes. Add mushrooms; cook 5 minutes more, stirring occasionally, until fork can be inserted into chicken with ease. Reduce heat to low; stir in sour cream and cheese. Cook until cheese melts, about 2 minutes. Stir in crumbs and sprinkle with parsley.
