Chicken Curry Recipe

2 1/2 to 3 pounds chicken breast, boneless
2 tbl olive oil
1 tablespoonful unsalted butter
1 medium onion finely chopped
4 cloves garlic finely chopped
2 teaspoon chopped fresh ginger
1 TSR ground cumin
1 small can diced tomatoes
1 teaspoon ground coriander
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon ground turmeric
1/4 to 1/2 teaspoon cayenne pepper
1/2 cup water

1/2 cup plain yogurt
1 tablespoonful lemon juice

3 cups favorite cooked rice

Cut chicken into 1 inch pieces, set aside

Blend together all ingredients, except rice and olive oil in a large bowl.

Cook all chicken in olive oil until golden brown.

Add mixture to chicken pieces, stir until all is coated.

Let simmer for 25 minutes.

In meantime cook rice and place on large serving platter.
When chicken is done, spoon onto plate and serve
