2 cups boiling water
1 cup cold water
2 1/2 cups sugar
3/4 cups cornstarch
1/8 tsp salt
1/4 cup lemon juice
1/3 cup Jello mix - (combine 1 (3oz) box orange jello and 1 (3oz) box pineapple Jello in Ziploc bag. Scoop out what you need and store the rest. Mixture stays good almost forever)

Spread For Pie Crust
1/2 cup powdered sugar
1 (8oz) cream cheese

Directions:

Bring 2 cups of water to a boil. While water is boiling make paste of 1 cup cold water, sugar, constarch and salt. Pour mixture into the pan of boiling water and mix well. Cook over medium heat until thickens (3-5 minutes). Add Jello mixture and stir. Cook for an additional 1 minute. Remove from heat and add lemon juice. Chill jello mixture prior to filling pie shells. For Pie Spread, mix sugar and cream cheese. Spread on cooled baked pie shells. Peel and slice 6-8 peaches. Mix with chilled jello. Pour into pie crust. Chill for 4-5 hours for best results. Makes 2 large pies or 3 small pies.
