2 eggs
1 c. sugar
1/2 c. marg. or butter, melted
1 c. overripe, mashed bananas (about 3 med.)
1/2 tsp. almond flavouring
1 tsp. vanilla flavouring
1 1/2 c. flour
1/2 c. coconut
1 1/2 tsp. baking powder
1/2 tsp. baking soda
sprinkle salt
1/2 c. chopped nuts (almonds, pecans, walnuts - whatever you have on hand)
1/4 c. chopped maraschino cherries
1/2 c. chocolate chips

Mash bananas and eggs together in mixing bowl. Add sugar, marg. and flavourings. Mix well. Set aside. Mix remaining ingredients in a separate bowl. Add liquid mixture. Stir just to combine. Spoon into greased loaf pan. Bake in 350F oven for approx. 1 hour or until toothpick inserted comes out clean. Let stand 10 min. Remove from pan and cool. Enjoy! :)
