8-12 oz. fresh salmon fillet
salt and pepper
16 oz. frozen or fresh cheese tortellini
3/4 c. light mayonnaise
2 Tbsp. lemon juice
1 1/2 c. frozen peas
1/2 c. fresh basil leaves, finely chopped

Preheat grill to high, oil grate. Lightly sprinkle salmon with salt and pepper. Grill salmon. Lower heat to medium, turn salmon once until cooked through and easily flakes with a fork; about 10-12 minutes depending on thickness of fillet. Meanwhile bring a pot of salted water to a boil. Add tortellini and cook according to directions, about 7 minutes. Drain and run under cold and drain again.
In a large bowl, whisk together mayonnaise and lemon juice. Mix in tortellini and peas. Season to taste with salt. Remove skin from salmon and cut in bite size pieces. Gently stir in salmon and basil. Serve.

This actually qualifies as a main dish. I have a pot of basil, so I have fresh anytime; but you can use dried. You may grill the salmon ahead of time and refrigerate until use.
