Ingredients: 2 1/2 cups cream 5 oz (1/2 cup plus 2 tbs) super fine sugar Small 1/2 inch piece of fresh ginger, peeled and grated 1/3 cup lemon juice 1 oz crystallized ginger, finely chopped 1/2 cup fresh raspberries

Directions:Place the cream, sugar, and fresh ginger in a small saucepan and stir constantly over medium heat until the mixture boils. Reduce heat and simmer for 5 minutes. Remove from heat, add the lemon juice and crystallized ginger and let sand for 5 minutes. Carefully add the raspberries and fold in gently to combine. Divide the mixture evenly among eight small cups or ramekins, cover and refrigerate for at least 2 hours or until the mixture has set. |

Notes: For the pots de creme to set successfully you need to let the cream and sugar boil and then simmer. This will allow all the sugar to melt properly. If you shorten the time the cream cooks, it will not set correctly. Adding the lemon juice at this point will ensure that the mixture thickens.
