1 1/2 lbs beef tenderloin
2 Tbsp. butter
1 1/2 cups beef broth, divided
1 tsp. salt
2 tsp. minced garlic (or garlic powder)
3 Tbsp. cornstarch
1 medium onion, cut into strips
1 medium red bell pepper, cut into strips
1 medium green bell pepper, cut into strips

Cut beef across grain into 1/2 inch strips: coat with cornstarch. Melt butter in pan over medium-low heat. Add beef and cook until brown. Set aside 1/3 cup of the broth. Add remaining broth, onions, salt, and garlic to meat. Heat to boiling, and then reduce heat to low. Simmer for 10 minutes. Stir reserved 1/3 cup broth. Slowly stir into beef mixture. Add peppers and heat to boiling, stirring constantly. Reduce heat to medium and cook for about five minutes. Serve over rice. Serves 4.
