2 or 3 jars marinated artichoke hearts
1 (10 oz) pkg. chopped spinach, well-drained
1 small onion, chopped finely
2 cloves garlic, minced
8 eggs
1/2 c. bread crumbs
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1/2 tsp. Tabasco sauce
4 Tbsp. fresh parsley, chopped
1/4 c. Parmesan cheese
2 c. Cheddar cheese, grated
1 c. Jack cheese, grated

Directions:
Directions:
1. Drain artichokes and put juice into frying pan. Chop artichokes finely and set aside. Saute onion and garlic in the marinade for 5 minutes.

2. In bowl, beat eggs, just slightly. Add salt, pepper, oregano, and bread crumbs. Stir well. Mix in remainder of ingredients and pour into a greased 9 1/2 x 11 inch pan. Bake at 325ºF for 30 minutes. Cool and cut into squares.
