3 c. small curd cottage cheese
1 1/2 c. Jack cheese, grated
3 eggs
6 Tbsp. parsley, minced
1 Tbsp. green onion, minced
3/4 tsp. pepper
1 lb. filo pastry sheets
1 1/2 c. butter, melted

Directions:
Directions:
1. Mix cottage cheese, Jack cheese, eggs, parsley, onion, and pepper.

2. Separate 3 sheets filo dough and restack with butter spread between each layer. Cut into 6 crosswise strips. Spoon 1 tablespoon filling onto one strip, about 1 1/2 inches from end. Fold pastry over filling. For second fold, bring folded edge to left side of strip to form a triangle. Continue folding as you would a flag until pastry strip is completely folded and you have a triangle.

3. Fill and fold remaining strips in the same manner. Cover cheese triangles and pastry sheets with damp towels as you work to prevent drying. Place cheese triangles on baking sheet. Bake at 350ºF for 15 minutes or until light golden. (Cheese triangles may be frozen before or after baking. Bake frozen unbaked triangles 20 minutes. To reheat frozen prebaked triangles, place in 300ºF for about 5 minutes)
