Donna Vandygriff (Muscatine IA)


3 cups flour
2/3 cups oil
2 cups sugar
2 tsp. soda
1/2 cup cocoa
2 cups water
1 tsp. salt
2 T vinegar
2 tsp. vanilla

1 8oz. pkg. cream cheese
1 egg
1/3 cup sugar
1/2 tsp. salt
1 6oz. pkg. semisweet chocolate chips

Combine filling ingredients except chips, beat until smooth and then add chips. Set filling mixture aside.

Sift together all dry batter ingredients and then add liquids, blend until smooth. Fill each paper lined cupcake in pan 2/3 full. Top with a heaping teaspoon of filling. Bake in a 350 oven for 25 minutes. Frost with white or chocolate frosting.
