1 lb. bulk sausage
2 1/2 C. mozzarella cheese, divided
1 container (15 oz.) Ricotta cheese
1/2 C. grated Parmesan cheese, divided
1/4 C. fresh parsley, chopped
1 egg, lightly beaten
1/8 tsp. ground nutmeg
1 jar (26 oz.) spaghetti sauce
1/4 C. water
9 lasagna noodles, cooked and drained

Cook the sausage in a skillet, breaking up large pieces. Drain and set aside. Combine the ricotta, Parmesan cheese, parsley, nutmeg and the egg; stir to combine. Mix the spaghetti sauce and water together, stirring to combine. In a 13x9x2-inch baking dish, put some of the sauce in the bottom of the dish. Put a layer of noodles over the sauce. Top with a bit of sauce, cooked sausage and some of the cheese mixture; sprinkle with mozzarella cheese. Repeat layers; top the final layer of noodles with sauce and a sprinkle of Parmesan cheese. Bake in a 350 oven for 45 minutes, or until bubbly and heated through. Serves 9.
