3 cups sliced mushrooms (fresh is better than canned)
2 tbsp butter
1 small white onion, finely chopped
1 garlic clove, crushed
2/3 cup dry white wine
2 cups farfalle pasta
1/2 cup mascarpone cheese
1 cup gorgonzola cheese, crumbled
1/2 lb - 1lb chicken, diced
black pepper

Directions:
Directions:
Melt the butter in a large saucepan, add the onion.
Saute until tender.
Add mushrooms and chicken, garlic, salt and plenty of black pepper until tender and cooked
Add the white wine.
Simmer.

Cook the Farfalle in a large saucepan of rapidly boiling water (as directed on package).

Meanwhile, stir the mascarpone and gorgonzola into the mushroom/chicken sauce.
Heat through and stir until melted.
Taste for seasoning.

Drain the pasta, add to the sauce and mix.

Garnish with sage leaves.
Season with additional black pepper.

For a lighter sauce, use creme fraiche instead of mascarpone (but note, I've never tried this)
