3 cups chicken broth
1 cup wild rice
5 T. butter, divided
1/2 lb. fresh mushrooms, trimmed
Salt and freshly ground black pepper to taste

Directions:
Directions:
In a medium saucepan heat broth and rice to boiling. Reduce heat to low, cover and simmer 45 minutes. Drain rice well and transfer to 2 qt. baking dish. Stir in 2 T. butter and set aside. In a large skillet melt remaining 3 T. butter over medium-high heat. Add mushrooms and saute 4 minutes until tender. Stir mushrooms into rice. Season with salt and pepper. Cover baking dish and bake at 250 degrees for 20 minutes.
