1 lb. sausage, browned and drained
3 c. water
1 tsp. salt
1 c. uncooked grits
2 eggs, beaten
12 oz shredded cheese
dash of hot sauce (optional)

Directions:
Directions:
Brown and drain sausage. In a medium saucepan, boil water. Add salt and grits, stirring. Cook according to package directions. Combine cooked grits with sausage, beaten eggs, hot sauce, and most of the cheese (reserve some cheese to sprinkle on top).

Pour into a greased baking dish (9x13" or 8x8" works fine). Bake at 325º for 25-30 minutes.
