2 lb. zucchini (about 8 inches long)
1/4 c. finely chopped onion
1/2 lb. pork sausage (I like to use a spicy sausage)
1/2 c. fine cracker crumbs
2 eggs, slightly beaten
1/2 tsp. thyme
1/2 tsp. salt
1/2 c. grated Parmesan cheese

Directions:
Directions:
Wash zucchini, and trim off ends. Cut into half inch slices. Cook in boiling salted water 15 minutes. Drain and mash.
Place onion and sausage in skillet over medium heat.
Cook and stir frequently until brown.
Combine rest of ingredients except 1/4 cup cheese.
Put in baking dish. Sprinkle with rest of cheese.
Bake 45 minutes at 350 degrees.
