1/2 C. butter
1/2 C. chopped onion
1/2 C. flour
2 cans (14.5 oz) chicken broth
2 cans (12 oz) evaporated milk
4 large or 6 medium baking potatoes, baked or microwaved
Cooked and crumbled bacon
Shredded cheddar cheese
Sliced green onions

Directions:
Directions:
Melt butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1-2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 2 potatoes (reserve potato skins); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining potato skins and potatoes; add to soup. Stir in bacon, cheese and gr. onion. Heat thoroughly. Season with salt and ground black pepper. Enjoy!!

I've never had Margie's potato soup, but this one is awesome. So hopefully Teresa agrees and I'm not banned from the soup category :o)
