3 c. mashed sweet potatoes (baked until soft)
1 c. sugar
1/2 c. milk
1/3 c. corn oil (Mazola)
2 eggs
1 tsp. vanilla

Topping:
1 c. flaked coconut
1 c. chopped nuts (pecans work well)
1 c. brown sugar
1/3 c. flour
1/3 c. butter, melted

Directions:
Directions:
Combine potatoes, sugar, milk, oil, eggs, and vanilla and pour into 8x8 baking dish.

For topping, blend coconut, nuts, brown sugar, and flour well, and then add melted butter. Spread over potatoes.

Bake at 375 degrees until topping browns (about 25 minutes)
