1/4 cup butter, 1/2 cup chopped onion, 1/2 cup chopped celery, 1/2 cup chopped carrots, 1/4 cup flour, 1-1/2 tbls cornstarch, 3 cups chicken broth,3 cups milk, 1/8 tsp. soda, 1 cup cheddar cheese, grated, 1 cup Velveeta cheese (8 oz.) cut into cubes, 1/2 cup American cheese, grated.

Saute onion,celery, and carrots in butter in a medium size pot. Add flour and cornstarch, stirring well to mix. Stir in broth and milk. Add soda and cheeses, heat until all cheese is melted and well incorporated. Season with salt and pepper and serve.
