1-1/2# Eckrich Smoked Sausage
1 Med. Onion coarsely chopped
l Large Clove Garlic
1 Can Corn (drained, reserving liquid)
1 Can Rotel Tomatoes (drained, reserving liquid)
1 Pkg Long Grain & Wild Rice
1 c Monterrey Jack Shredded Cheese

Directions:
Directions:
Brown sausage, onion & garlic together. Drain off fat. Add reserved liquids and enough water to make 2-2/3 cups. Pour over sausage. Add rice and seasoning packet. Cover tight and simmer until liquid is absorbed. Add corn and tomatoes. Heat through. Sprinkle cheese on top. Cover and cook until cheese melts.
