1 Tbsp. salt
3 qt. boiling water
1 box (1 lb.) rigatoni pasta
1 small onion, chopped
1 clove garlic, minced
1 jar (16 oz.) tomato sauce, thinned with a bit of water
2 lbs. ground beef
2 eggs, beaten
1/2 C. seasoned dry bread crumbs
3 Tbsp. chopped parsley
Salt & pepper
Grated Parmesan cheese

Add tablespoon of salt to rapidly boiling water. Add rigatoni so that water continues to boil. Cook uncovered, stirring occasionally, until al dente. Drain in colander, then rinse with cold water and drain again. Spread rigatoni out on tray. Mix the ground beef with onion, garlic, eggs, and seasoned bread crumbs. Season to taste with salt and pepper. Stuff rigatoni with meat mixture. Ladle a bit of sauce in a 3 qt. casserole. Arrange stuffed rigatoni in a single layer; top with a bit more sauce; sprinkle with Parmesan cheese. Repeat layering, ending with sauce. Top with Parmesan cheese. Cover; bake in a350 degree oven for 30 minutes, uncover and bake another 30 minutes.

Mom always made this dish for us as kids. This is the closest I could come to her recipe. I usually add about 1/4 C. water to the sauce. The rigatoni will absorb the water from the sauce to help the cooking process. Do not use extra lean beef! The flavor of the dish will get lost, and the casserole will turn out too dense.
