4 catfish fillets (6 oz. each)
1/2 C. grated Parmesan cheese
1/2 C. sour cream
1/2 C. mayonnaise
1 shallot, minced
1 Tbsp. white wine vinegar
1 tsp. dry tarragon
1/4 tsp. salt

Rinse catfish and pat dry. Lay fish in a single layer on a lightly oiled rimmed baking sheet. In a large bowl, combine 1/2 of the cheese, the sour cream, mayonnaise, shallot, vinegar, tarragon and salt. Spread mixture evenly over fillets. Bake at 375 until fish is tender when pierced in the thickest part, 10 to 12 minutes. Remove fish from the oven. Turn on broiler and move rack to position so fish will be 3 to 4 inches from heat; let broiler heat about 3 minutes. Sprinkle fillets evenly with remaining cheese and sprinkle with paprika. Broil until cheese softens and topping develops hints of a golden color, about 2 minutes. Remove from broiler and place on a serving dish.
