2 Tbsp. butter
1 cup sliced fresh mushrooms
2 sm cans (6 oz) spicy "V-8" vegetable juice
1 Tbsp. cornstarch
1/2 lb. hot sausage
1/4 cup chopped green onions
8 eggs, slightly beaten
8 flour tortillas (6 inch)
1 cup shredded cheddar cheese
1/4 cup sliced olives, as topping

Directions:
Directions:
To make sauce: in saucepan over medium heat, melt butter and saute mushrooms until slightly brown.

In a cup, mix 1 can of v-8 juice with cornstarch. Stir into mushrooms. Add remaining v-8, Heat, stirring until sauce is thickened.
Meanwhile, in skillet over medium heat, cook sausage and onion until sausage is done. Drain fat. Pour in eggs and cook eggs until they are set but slightly moist.

To make burritos, spoon egg mixture along center of each tortilla, dividing mixture evenly between
tortillas. Roll up, folding edges in and arrange in lightly greased 13 x 9 baking dish. Pour sauce over burritos. Sprinkle with cheese. Bake at 375 for 10 minutes or until hot and bubbly and cheese is melted.
Garnish with olives. Makes 4 servings.
