2 each peppers (red, yellow)
4 each zucchini/summer squash
2 sweet onions
2 Tbsp. olive oil
2 tsp. dried oregano
½-1/3 tsp. salt
½ tsp. pepper
¼ c. chopped fresh parsley
2 Tbsp. balsamic vinegar
(fresh roma tomatoes- optional)

Directions:
Directions:
Cut squash and zucchini into 1 inch thick slices; cut onions into fourths and bell peppers into ½ inch strips. Combine squash, zucchini, onion, and oil in large roasting pan; sprinkle with oregano, salt, and pepper. Bake at 500 degrees for 10 minutes. Add bell peppers (and tomatoes, quartered) and toss gently. Bake 10 more minutes or until veggies are tender and begin to char. Place veggies in serving bowl; cool slightly. Sprinkle with parsley and vinegar; toss gently.
