1 lb. ground beef or turkey
1/2 c. cooked spinach, drained
1/2 c. grated raw carrots
1/4c. chopped tomatoes
1/3c. bread crumbs
1 1/2 tsp. salt
1/8 teaspoon pepper
1 egg
1/2 cup chopped onion
ketchup

Directions:
Directions:
Preheat oven to 400 degrees. Mix together beef/turkey, spinach, carrots, tomatoes, bread crumbs, salt, pepper, egg, and onion. Pack into a greased loaf pan. Bake for 1 hour. Pour ketchup over top and bake 5 more minutes.

I often double the veggie amounts and use oatmeal instead of bread crumbs.
