3/4 cup creamy peanut butter
1/2 cup or 1/2 stick Crisco all vegetable shortening
1 1/4 cup firmly packed light brown sugar
3 tbsp milk
1 tbsp vanilla
1 egg
1 3/4 cup all purpose flour
3/4 tsp salt
3/4 tsp baking soda

Directions:
Preheat oven to 375º. In large bowl, combine, peanut butter, shortening, brown sugar, milk and vanilla; beat at medium speed with an electric mixer until well blended. Add egg; beat just until blended. Combine flour, salt, and baking soda; add to cream mixture and beat at low speed until just blended. Drop by heaping teaspoons 2 inches apart on ungreased cookie sheet. With fork, flatten slightly in criss cross pattern. Bake for 7-8 minutes or until set and just beginning to brown. Remove cookies from cookie sheet and allow to cool.
