1 pound broad egg noodles
1/2 pound diced ham
1/2 pound cooked smoked pork diced (or more ham)
3/4 cup butter 3 eggs separated
1/2 tsp. salt
1 cup sour cream
1/2 cup flour 1 1/2 cups hot milk
1/4 cup grated cheddar cheese

Cook noodles in salted water according to direction, drain run under cold water; drain. Cream 1/2 cup butter with egg yolks and salt. Add sour cream, noodles, ham, and pork. Fold in stiffly beaten egg whites. Pour mixture into a well buttered casserole. Lightly brown flour in 1/4 cup butter. Add hot milk very gradually, stirring constantly over a low flame until sauce is smooth. Stir in cheese. Cool sauce, and spread evenly over ham-noodle mixture. Bake in pre-heated moderately slow oven (325 degrees for 45 minutes or until top is golden brown and crusty.

When we were small children Grandma Karbath made this often. She only used ham. All we kids loved the dish and make it to this day. It is great served with a mixed salad.
