1 tbsp. grated Parmesan cheese
2 shallots – finely chopped
6 ounces of fresh chopped spinach
1 clove of garlic – finely chopped
6 ounces chopped pancetta
1 tsp olive oil
3 tablespoons butter or margarine + 1 tsp for preparing dish
3 tablespoons all-purpose flour
¼ teaspoon ground nutmeg
dash cayenne pepper
¼ tsp salt and pepper
1 cup milk
½ cup shredded Cheddar cheese
½ cup shredded Italian cheese
4 egg yolks - beaten
6 egg whites
1 pinch cream of tater

Preheat oven to 400 degrees
Grease a medium sized soufflé dish with butter. Dust dish with grated Parmesan cheese and set aside.
In a medium sized skillet, brown pancetta in the olive oil over med-high heat until crispy. Remove from pan and drain on paper towels.
In the same pan, over medium heat add the shallots and garlic. Cook for 1 minute. Add the chopped spinach and cook until wilted (2-3 minutes). Remove from heat and set aside.
In a saucepan, melt butter. Stir in the flour, salt, pepper, nutmeg and cayenne until smooth; gradually add the milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; stir in cheese until melted. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Add the spinach mixture and the pancetta. Cool slightly.
In a different mixing bowl (not the bowl that you beat the egg yolks in), with clean beaters, beat egg whites and cream of tartar until stiff peaks form. Gently fold into egg yolk/cheese mixture. Pour into prepared soufflé dish. Bake at 400 degrees for 15 minutes then reduce the temperature to 375 degrees and bake for 15 - 20 minutes more or until a knife inserted near the center comes out clean. Serve immediately.
