2 lbs. squash= 6 cups
1/4 c. onion chopped
1 can cream of mushroom soup
1 cup sour cream
1 cup shredded carrot
1 8 oz. herbed stuffing mix
1/2 cup melted butter

Directions:
Directions:
In a saucepan cook squash and onion in boiling water for 5 minutes and drain. Combine soup, sour cream, and carrot. Fold in squash mixture. Combine stuffing and butter, then spread half on bottom of baking dish. Spoon vegetable mixture on top and layer other stuffing over all. Bake at 350º for 25-30 minutes.
