3 lbs. chicken breasts, boned, skinned & chunked
Flour
Oil
Salt & pepper
Sweet and sour sauce
1 medium can pineapple chunks
1 green pepper in chunks
1 T. soy sauce
1 t. ginger
1 chicken bouillon cube
1 onion
1/4 c. brown sugar
2 T. cornstarch
1/2 c. vinegar

Directions:
Directions:
Sweet and sour sauce: Drain pineapple juice and add water to make 1 1/2 cups. In saucepan combine liquid, sugar, cornstarch, vinegar, soy, ginger, bouillon, and onion. Boil, stirring until clear and thick.
Coat chicken with flour, salt, and pepper. Brown in 2 T. oil. Place in a single layer in a shallow casserole. Cover with sauce and bake 30 minutes at 350. Remove from oven and add pineapple chunks and green pepper chunks, return to oven and bake 30 minutes more. Serve with rice!
