Spinach Cheese Salad Recipe

1 (10oz) bag baby spinach, washed and trimmed
1 small head of lettuce, washed and drained
3/4 lb grated swiss or mozzarella cheese
1 (16oz) carton cottage cheese (optional)
1/2 lb bacon, cooked and broken into small pieces

Poppy Seed Dressing
1 1/4 tbsp poppy seeds (optional)
3/4 cup vinegar
1/2 cup sugar
1 1/2 tbsp grated onion
1 1/2 tsp salt
3/4 tsp dry mustard
1 1/4 cup vegetable oil

Place spinach in large bowl. Break lettuce into pieces. Combine with spinach. Just before serving add cheese, cottage cheese, bacon, and dressing. For dressing mix everything in a blender. Refrigerate unused dressing, keeps up to 3 weeks.
