4 c. fresh tomatoes chopped
2 tsp minced garlic
1 c. sweet onion finely diced
2 jalapeno peppers minced (Use a few seeds to make it hotter)
1/2 c. fresh cilantro chopped
2 T. fresh lime juice
1 tsp cumin
1 tsp extra virgin olive oil pinch sugar if needed

Directions:

Combine all ingredients except olive oil and gently toss. Cover and let stand at least 1 hour. Before serving mix in olive oil. For a heartier salsa add 1 can drained and rinsed black beans and 1 can drained Mexican corn.
Serve with chips or as a topping for grilled chicken or seafood
