Vegetable cooking spray
2 cups peeled, cubed butternut squash
1 pound bonned, skinned chicken, bite-sized pieces
1 cup chopped onion
1/2 cup raisins
5 cloves garlic, chopped
3/4 cup white wine
2 tsp curry powder
1/2 tsp crushed red pepper
1/2 tsp ground nutmeg
1/4 tsp salt
2 1/2 cups cooked hot rice

Coat a large skillet with vegetable cooking spray, place over med. heat until hot. Add butternut squash and saute 9 min. Add chicken pieces and next 3 ingredients, saute 5 min or until chicken is done. Add wine and next 5 ingredients, cook 1 min. Serve over rice
