1 cup cornmeal
1 cup whole wheat flour
2 1/4 tsp baking powder, divided
1 tsp baking soda
1/2 tsp salt
1/4 cup applesauce
1/2 cup apple juice concentrate
3/4 cup milk
3 tbsp melted butter
1 cup grated zucchini

Directions:
Directions:
Preheat oven to 400. In medium bowl, combine cornmeal, flour, 2 tsp baking powder, baking soda and salt. In a large bowl combine applesauce with 1/4 tsp baking powder. Add apple juice concentrate, milk, and melted butter to applesauce. Slowly mix dry ingredients into wet. Mix in zucchini. Spoon into oiled muffin pan. Bake 18-22 minutes or until toothpick inserted into center comes out clean. Makes 12 servings.
