1 cup cornmeal
1 cup whole wheat flour
2 1/4 tsp baking powder, divided
1 tsp baking soda
1/2 tsp salt
1/4 cup applesauce
1/2 cup apple juice concentrate
3/4 cup milk
3 tbsp melted butter
1 cup grated zucchini

Directions:
Directions:
Preheat oven to 400º. In medium bowl, combine cornmeal, flour, 2 tsp baking powder, baking soda and salt. In a large bowl combine applesauce with 1/4 tsp baking powder. Add apple juice concentrate, milk, and melted butter to applesauce. Slowly mix dry ingredients into wet. Mix in zucchini. Spoon into oiled muffin pan. Bake 18 to 22 minutes or until toothpick inserted into center comes out clean. Makes 12 servings.
