15 ¼ oz. can pineapple chunks, juice reserved
2 Tbsp. ketchup
2 Tbsp. vinegar
1 Tbsp. cornstarch
1 Tbsp. brown sugar
1 Tbsp. soy sauce
½ tsp. instant beef bouillon granules
Dash ground red pepper
Green or red bell pepper
Cocktail meatballs *

Directions:
Drain pineapple chunks, reserving juice. Add water to juice to make 1 cup. In a saucepan, combine juice mixture, ketchup, vinegar, cornstarch, brown sugar, soy sauce, granules, and ground red pepper. Cook and stir till thickened and bubbly. Add pineapple and green pepper. Add meatballs and heat through.

I usually serve these as an appetizer for dinner parties or take them as an hors d’oeuvre to potlucks. When making them at home, I serve them over steamed rice—yum! A big hit with the hubby AND the kiddos! 

* I used Shady Brook Farms’ Turkey Meatballs – MUCH less fat & healthier, and they still taste great. But the sauce will work just as wonderfully with any frozen meatballs or meatballs made from scratch (I typically use the standard Betty Crocker recipe when making meatballs from scratch).
